Grilled Cauliflower Steaks

Grilled Cauliflower Steaks paired with a salad of Roasted Broccoli, Spiced Chickpeas, Amaranth, Feta, Olives and a Lemon Tahini Dressing.



  • 5 cups salad greens 
  • 1 Cauliflower head
  • 1 Large Broccoli crown
  • 1/2 cup pitted olives
  • 1 15 oz. can chickpeas
  • 1/2 cup crumbled feta
  • 1 cup grain of choice (Amaranth, Quinoa, Cous Cous, etc.)
  • 1 tsp. cumin
  • 1 tsp. smoked paprika
  • 1/4 tsp. salt 
  • 1/2 packet Nudespice "Heady and Herby"
  • 4 Tbs olive oil (more if needed)


  • Cook grains according to packet directions
  • Preheat oven to 200C
  • Slice cauliflower into 1-inch steaks. Marinate with olive oil (2 Tbs) and Nudespice Heady & Herby blend.
  • Rinse and drain chickpeas. Place on baking tray with 1 Tbs olive oil, cumin, smoked paprika and salt. Bake for 20-25 minutes
  • Cute broccoli into small pieces and roast on baking sheet with olive oil for 15-20 minutes
  • On a heated grill pan, place marinated cauli-steaks for 2 minutes on each side, or until 
  • Place salad greens in a bowl, add grilled cauli-steaks, chickpeas, grains, broccoli, feta, and broccoli
