Hot & Tangy Speedy Spelt Salad

Don't let the winter season get you down, try this tasty Nudespice Hot & Tangy salad to tickle your taste buds! Full of nutrition and goodness, this is an easy healthy meal to help you along with your day. 


  • 80g cooked barley
  • Cooking oil spray
  • 1 tsp chopped garlic
  • 1/4 yellow pepper, diced
  • 1/4 green pepper, diced
  • 1/2 chilli, sliced
  • 1 spring onion, chopped
  • 1 large handful of kale
  • 2 tsp Nudespice Hot & Tangy blend
  • 1/4 an avocado
  • 1 tomato, diced
  • Salt & pepper to taste
  • Garnish: chilli flakes, cress


  • Preheat oven to 180c
  • Line 2 baking trays and place the kohlrabi, squash and parsnips on, making sure they are spread out and not overlapping
  • Combine olive oil and seasoning in a small bowl then sprinkle over the vegetables, making sure they are evenly coated
  • Roast in the oven for 30 minutes, adding the onion for the final 10 minutes
  • In the meantime, steam the spring greens for 5 minutes to cook and set aside
  • Spoon the greens onto a plate, then top with the roasted vegetables and a little salt. Sprinkle over the pumpkin seeds and enjoy!
