Savory Vegetable Frittata

A tasty Savory Vegetable Frittata. Perfect for you vegetarians out there. Don't forget to include our very own Nudespice Spice & All Seasoning. 

Ingredients

  • 1 small onion, sliced 
  • 2 cups baby mushrooms, sliced
  • 2 cups raw kale, chopped and de-stemmed
  • 2 Tablespoons olive oil 
  • 1 Tablespoon + 1 teaspoon Nudespice Spice & All blend
  • 1/3 cup shredded cheddar cheese
  • 8 eggs
  • 1/2 cup soy milk

Method 

  • Preheat the oven to 180C
  • In an oven-safe skillet, sauté onions and mushrooms on low-medium heat in olive oil
  • When the onions are caramelised, add Nudespice Spice & All blend
  • Add kale
  • Whisk 8 eggs in a bowl and add soy milk 
  • Pour egg mixture into pan and stir to incorporate vegetables
  • When the edges begin to solidify, top with cheddar cheese and pop into the oven for 15-20 minutes, until fully cooked
  • Let cool and enjoy!
